Abstract

Zizyphus jujube is a thorny rhamnaceous plant, and its different parts possess multiple medicinal properties. Evaluation of the nutrient composition, phytochemical screening and antioxidant properties were studied in different parts of Ziziphus Jujube Mill viz., pulp, seed and combination of pulp and seed. Methanol and aqueous extracts were analyzed for flavonoid, saponin contents and antioxidant activities. Two experimental models including 2, 2-diphenyl-1-picryl-hydrazyl (DPPH) free radical scavenging activity and reducing power assay were used for evaluating of antioxidant activity of the extracts. Protein and iron contents were significantly (p < 0.05) higher in seed while pulp was rich in phosphorus. By sequential extracts, maximum phytochemicals were screened in the aqueous and methanolic extracts. The highest levels of polyphenol, tannin, glutathione, and ascorbic acid contents were found in the pulp. The greatest DPPH activity and reducing power assay were exhibited in methanolic extract of the seed. High correlation coefficients were found among antioxidant contents and antioxidant activities of different samples except for polyphenol and glutathione of pulp in reducing power assay. Based on results obtained, jujube with the potential source of nutrients and antioxidants might be used as a natural antioxidant.
